My hubby is transitioning into veganism. He has eliminated all meat from his diet. He consumes cheese and eggs every once in a while, but will soon eliminate them altogether as well.
In an effort to feed him what his soul craves, I’ve begun concocting 100% vegan dishes. Turns out, vegan food is delicious and makes the body feel so loved. Now, I’m slowly, but surely, beginning to truly embrace transitioning too.
The picture features a lovely plate of vegan edible art, made with love by yours truly, for the hubster. Sweet potato mash w/sauteed mixed veggies. The veggies were cooked perfectly. Still had crunch, which means all of the nutrients didn’t cook out of them. The potatoes were creamy and divine. Just the right balance of sweet & savory. Even our kids enjoyed this meal.
This vegan concoction was quick, affordable, full of nutrients, guilt-free, delicious and quite filling!! I didn’t feel heavy, tired or like I over-indulged after I ate this. I could feel my body digesting this food easier — and, less stress on the body (especially with my physical issues) is always good.
No animals were harmed in the making of this meal. All fresh, plant based, organic, natural foods from our glorious Earth.
